From the union of two jowls comes this specialty with a full and lingering flavor.

The fresh meat comes from heavy Italian pigs raised on local farms. The jowls are hand-processed, first removing the rind, then overlapping them. After being seasoned with fresh local herbs, the jowls are stuffed into natural casings and tightly bound between two wooden boards, which are removed only after a slow aging process.
